Otterbein Food Service Team Nationally Recognized for Responsible Practices

The Bon Appétit Management Company food service team at Otterbein College has been selected as a regional winner in the company’s Be-A-Star program, program in its twelfth year that recognizes associates who excel in sustainability, healthy cooking, community involvement, diversity, and financial performance.

Through its Farm to Fork program, Bon Appétit buys produce in season within a 150-mile radius of the campus. The practice boosts the local economy and reduces “food miles,” the distance food travels from harvest to table, which in turn decreases global warming, air pollution, water contamination, traffic congestion, and the need for oil. Bon Appétit at Otterbein buys milk from Ohio cows that are hormone and antibiotic free; stocks only free trade coffee on campus; makes seafood purchasing decisions based on the Monterey Bay Aquarium Seafood Watch recommendations; and buys only cage-free eggs, and all shell eggs are Certified Humane, which means battery cages are not permitted and the housing facilities must include areas for hens to nest, dist bathe, scratch and perch. Other practices at Otterbein include the use of canola oil for frying and unbleached, biodegradable napkins in the cafeterias and cafes on campus. Used frying oil is given to The Ohio State University, which uses the oil as an alternative fuel for their vehicles.

To help students make healthy choices, vegetarian options are plentiful at every meal; stocks are made from scratch the day before use to ensure the removal of fats; turkey and beef are roasted in-house daily for deli meat; trans fats are not used; and MSG and peanut oil are never used. Labels appear throughout the cafeteria indicating which foods are low fat, “In Balance,” vegetarian, vegan, local organic and “For Your Well-Being.”

Otterbein Ranked 15th in U.S. News And World Report's 2008 "Guide to America's Best Colleges"

U.S.News America's Best Colleges 2008In the 2008 edition of U.S. News and World Report's “America’s Best Colleges,” Otterbein College earned the ninth highest peer assessment (academic reputation) score in the Universities–Master's (Midwest) category. Otterbein earned the 15th highest overall score among its 140 peers.

According to the guide, institutions in the Universities–Master's category provide a full range of undergraduate and master's programs while offering few, if any, doctoral programs. Otterbein is new to this category, making the move from last year's “Comprehensive Colleges” category, where it consistently ranked in the top 10.

Otterbein competed with 140 colleges from Ohio, Indiana, Illinois, Michigan, Wisconsin, Minnesota, North Dakota, South Dakota, Nebraska, Kansas, Iowa and Missouri for this honor. The rankings are based on 15 measures of “academic excellence,” which fall into seven categories, peer assessment being the most important. Other ranking categories include retention rates, faculty resources, student selectivity, financial resources, graduation rate performances and alumni giving rates.
